Its flavor is similar than regular spinach but a little milder. The plant grows quite differently from regular spinach. Instead of forming a bunch, New Zealand spinach branches and spreads like a vine. Used like spinach in cooking and salads, this frost-tender plant is ready for harvest when spinach is on the wane, and stays productive throughout summer. Also makes an attractive foliage plant for borders and beds. New Zealand spinach tolerates a wide range of conditions, but prefers well-drained, sandy soils, rich in organic matter, pH 6.8 to 7.0.
